The Upper Galilee region of northern Israel is home to some of the country's highest mountains, reaching more than a kilometer (five-eighths of a mile) into the sky. This region may be a great place to grow wine grapes; the days are hot, the nights are cold, and the soil is poor. What more could a winemaker want? Over two millennia ago people grew wine grapes in this very area. Today's winery was founded back in the year 2000. It encompasses five vineyards with 90% red and 10% white grapes that turn into 80,000 cases in 2010. If you are in the neighborhood make sure to tour their visitor's center.

I mentioned in passing once that years ago I made my one and only Christmas goose, which turned out to be tough. I believe and admire Chef Alton Brown when he sings the praises of it, but I don't seem to have the touch to make a decent roast goose. The only thing I would make instead would be a brisket beef, but after finding this recipe and the promise of pear-shallot relish, pork gets the nod this year.

Any large leftover pieces, once cold, should be wrapped in saran wrap first and then foil. In a 300 degree oven it takes a whole piece about 3 hours to heat up, so that is about an hour for every 2 pounds or so, I think..

Place the steak strips, flour, salt and pepper in the cooker and stir well so that the meat is coated. Add the remaining ingredients in the cooker and cover. Set the cooker on low and cook for 8-10 hours or set on high and cook for about 4 hours. Serve with rice. Yield: 4 servings.
